Processing:

Iridescence, a carbonic maceration washed Geisha, undergoes a meticulous process to enhance its delicate flavors. The coffee cherries are harvested at peak ripeness and immediately de-pulped. They are then placed in sealed tanks where carbon dioxide is circulated, replacing oxygen to control the fermentation environment. This stage is carefully monitored for temperature and pH to prevent undesirable aromas.

After fermentation, the coffee is dried on shaded African beds to protect it from direct sunlight and excessive heat. The drying process is meticulously controlled until the beans reach a residual moisture content of 10.5-11%. The coffee is then stored in hermetically sealed bags for 60-90 days at a stable, cool temperature to even out moisture content and enhance aromatic development.

Finally, the parchment coffee is hulled and sorted by size and density, ensuring only the finest beans are selected. The result is a refined coffee with notes of apricot, chamomile, and sugarcane, vibrant acidity, and balanced sweetness. Perfectly suited for filter extractions, Iridescence also shines in espresso preparations.
