The journey of this coffee profile involves several meticulous steps to ensure the highest quality and flavor complexity:

Cherry Harvesting:

    • Harvested at optimal ripeness.

Ozone Disinfection:

    • Cherries are disinfected using ozone.

Anaerobic Fermentation:

    • Fermented in specially designed tanks for 72 hours.

Pulping and Demucilaging:

    • Mucilage and pulp are extracted.
    • These are used to produce process-specific microorganisms.

Introduction of Microorganisms:

    • Culture rich in aroma and flavor precursors is added to fermentation tanks with pulped coffee.
    • Undergoes pressurized fixation for 36 hours to enhance flavor complexity.

Thermal Shock Process:

      • Consolidates aromatic richness.
      • Ensures optimal drying conditions.
      • Coffee undergoes dehydration in a controlled environment.
